Peanut Butter Noodles

Ingredients

Serves 1

  • 2 tsp yeast extract, such as Marmite
  • 20g peanut butter
  • 1/2 red chilli, finely chopped
  • 1 garlic clove, peeled and crushed
  • 10g ginger, peeled and grated
  • 1/2 tsp soy sauce
  • 65g baby spinach
  • 200g ready-to-eat udon noodles
  • 55g edamame or soya beans
  • 1 spring onion, sliced

Method

In a bowl mix together the marmite, peanut butter, chilli, garlic, ginger and soy sauce with a splash of boiling water then set aside.

Heat a large frying pan or wok over a medium to high heat. Add the spinach along with a splash of water, cook for a few minutes before adding in the noodles. Pour in the sauce and add the edamame. Stir everything together and cook for a few minutes, or until everything is hot. Serve up and sprinkle over the spring onion.
