Heat half of the oil in a large saucepan, season the chicken (or vegetarian chicken pieces) with salt and pepper then fry off until cooked through. Remove from the pan and set aside.
Heat the remaining oil in the pan, add the onion, pepper, courgette and aubergine and fry for 5 minutes until soft. Add the garlic, fry for a minute then add the tomatoes. Stir in the chicken, pasta and water, cover then simmer for 10 minutes until the pasta is cooked.
Remove from the heat, stir in the basil and serve with parmesan.
