Preheat the oven to 200°C. Whisk the egg and egg whites together and season with salt and pepper.
Place the tortilla wrap in a frying pan making sure that the edges are just turned up. Pour the egg mix onto the tortilla being careful to make sure it doesn't go over the sides, then scatter over the tomatoes, red onion and cheese.
Place in the oven for around 10 minutes or until the egg has set and the cheese is lovely and golden.
