Chicken Burger with Pepper Relish

Heat the oil in a non-stick frying pan over a medium to high heat. Fry the beef mince, onion and garlic for 5-6 minutes or until cooked through. Season with a little salt and pepper.
Meanwhile add the sauce ingredients to a blender, add 1 tsp of the gherkin liquid and blend until smooth. Set aside.
Assemble the lettuce, gherkins and tomatoes in a bowl. Top with the mince and drizzle over the sauce.
