Recipe of the day: Black bean enchilada

Try this banging vegetarian recipe of black bean enchiladas. It's packed full of goodness and will help fuel your body for some serious fat burning.

 

Serves 1

8g Coconut oil

100g white onion

1 clove of garlic

1 Green chilli

300g Black beans

120g fresh tomato

70g Frozen sweetcorn

100ml water

1 tsp Paprika

1 tsp Cumin

1 tsp Coriander

1 small handful fresh coriander

1 lime

2 Tortilla wraps

45g Mozzarella 

135g Salad greens

50g Sour cream

Method

 

Preheat oven to 200°c.

 

For bean mix: In a non-stick pan cook the diced onion, grated garlic and fresh chilli for 3-4 mins until nice and soft. Then add your drained black beans, sweetcorn, chopped tomato, water and all of your spices.

 

Simmer the mix for 10-12 mins until sauce begins to thicken. When sauce has thickened stir in the fresh coriander, squeeze of lime and season with salt and pepper.

 

To serve: Roll the bean mix into the tortilla’s and place pack into an oven proof dish side by side. Cover with cheese and bake for 10-15 mins until golden brown. Serve with salad greens and sour cream.
