I absolutely love this vegetarian black bean and mozzarella quesadilla. It's bursting with flavour and is a perfect post-workout meal. Give it a try and let me know what you think.
5g coconut oil
80g white onion
75g roasted red pepper
90g black beans
90g pinto beans
1 tsp cumin
20g tomato puree
1 tsp paprika
1 garlic clove
Small handful coriander
2 tortilla wraps
30g low fat mozzarella
130g green vegetables
Method (one serving)
Preheat oven to 200°c
For filling: Gently fry the diced onions in the coconut oil for 3-5 mins then add the garlic, spices, beans, tomato puree and a splash of water. Cook gently until there is no liquid left and beans have begun to break down. Finish with some fresh coriander and a squeeze of lime.
For quesadilla: Heat a non-stick pan and lay in one tortilla. Fill with bean mix, sliced roasted red peppers and cheese. Lay other tortilla on top and bake in the oven for 4-5 mins until crispy.
To serve: Serve the quesadilla when the cheese has melted with your choice of green vegetable, such as midget trees (broccoli), kale, spinach, mange tout or asparagus.
