Coronation Chicken Salad


Serves 1

  • 15g yoghurt, such as Greek, natural or soya
  • 15g mayonnaise
  • ¼ tsp mild curry powder
  • 10g mango chutney
  • 1 lemon, juice
  • Salt and pepper
  • 15g flaked almonds, toasted
  • 120g cooked skinless chicken breast, sliced
  • 20g sultanas
  • ½ baby gem lettuce, leaves torn
  • 1 handful rocket


In a bowl, mix together the yoghurt, mayonnaise, curry powder, chutney and lemon juice with a little salt and pepper.

Stir through the almonds, chicken and sultanas then serve on top of the lettuce and rocket.


  • This salad is great for on the go. Keep the chicken mix and salad separate in your lunch box until you're ready to tuck in.
