There's nothing like a good, hearty soup to warm you up in the winter. Try this tasty bowl of goodness and let me know what you think...
What you'll need: (Two servings)
500g chicken breast
15ml olive oil
160g white onion, diced
2 cloves garlic, grated
200g carrot peeled and diced
2 bay leaves
120g red pepper, diced
175ml white wine
400g tinned tomatoes
500ml chicken stock
100g frozen sweetcorn
80g button mushroom, quartered
250g protein pasta
Small handful of fresh coriander
Preheat oven to 200°c
For chicken: Season the chicken with salt and pepper and roast in the oven for 20-25 mins. Place to one side and allow to rest and cool.
For soup: In a large saucepan gently fry the onion, garlic, carrot, bay leaf and pepper for 5-6 mins until all the veg is soft. Now add the white wine, turn up the heat and reduce the wine volume by half. Now add the tinned tomatoes and chicken stock, bring to the boil and simmer. Add the sweetcorn and mushrooms and simmer for 4-5 mins. The soup is now ready to be served.
For pasta: Place pasta in a medium sized saucepan cover with boiling water and simmer for recommended cooking time. Drain and refresh in cold water.
To serve: Shred the chicken with your fingers and place in a bowl with a portion of pasta. Poor over hot soup garnish with fresh coriander and serve immediately.
Tips: Mix everything together and reduce the liquid for a stew.
