One Pan Sushi Traybake

Ingredients

Serves 4

  • 500g hot smoked salmon
  • 6 spring onions, sliced
  • 1 cucumber, diced
  • 50g mayonnaise
  • Salt and pepper
  • 500g sticky rice, cooked
  • 1 tbsp sriracha chilli sauce
  • 3 tsp sesame seeds

Method

Preheat the oven to 180°C.

Flake the salmon into a bowl and stir through the spring onions, cucumber and mayonnaise. Season well with salt and pepper.

Spread the cooked rice over the bottom of a roasting pan then spread the salmon mixture over the top. Bake in the oven for 10 minutes until the salmon is just starting to crisp on the top.

Drizzle over the sriracha and scatter over the sesame seeds before serving.

Tip

You can cook your own sticky rice to pack instructions or you can buy them in microwave packs from the supermarket.

This is also really tasty cold so get ahead on some packed lunch prep!
