Heat the olive oil in a large frying pan, or hob safe baking tray, over a medium high heat and add the gnocchi and chicken pieces. Cook for a few minutes or so just to brown the outsides, then add in the chopped tomatoes, peppers and green beans.
Add a good splash of water and leave everything to simmer together for 5 minutes until the gnocchi is soft and the chicken is cooked, then scatter over the grated mozzarella and serve.
To make your meal extra delicious, place the dish under a hot grill for a few minutes until the cheese is melted and golden.
This gnocchi will freeze well or keep in the fridge for 3-4 days so get ahead on some meal prep!
