Simple Chilli Pasta Bake
This easy pasta bake is a great way to get ahead on meal prep.

Preheat the oven to 180C.
Place the chicken, cauliflower and sweet potato onto a large roasting tray and drizzle over the oil and ras el hanout. Toss everything together and season with salt and pepper.
Roast in the oven for 15 minutes then add in the cherry tomatoes and cook for a further 5-10 minutes, until the chicken is cooked through and the vegetables just tender.
Meanwhile, mix the lemon juice in with the yogurt, season with a little salt and top with the lemon zest. Serve the traybake with the lemony yogurt and scatter the chopped mint leaves and feta over the top before serving.
