These cheesy filled turkey burgers taste nawwwty served with sweet potato fries and homemade slaw.


What you'll need: (one serving)


For turkey burger:

260g extra lean turkey mince

55g white onion

30g sundried tomatoes

Small handful of fresh oregano

15g black olives (optional)

35g mozzarella (soya or dairy free alternative can be used gram for gram)


For sweet potato fries:

230g sweet potato

6g coconut oil

1 teaspoon of paprika

1/2 teaspoon of garlic powder

Sprinkle of salt and pepper


For coleslaw:

80g white cabbage

45g white onion

80g carrot

65g Total 0% fat yoghurt (soya or dairy free alternative can be used gram for gram)

1/2 teaspoon Dijon mustard

Small handful of fresh parsley

Sprinkle of salt and pepper


Preheat oven to 200°C

For turkey burger: Dice the onion and roughly chop the sundried tomatoes and olives. Combine all of this in a mixing bowl with the turkey mince and fresh oregano.

Separate the mix into two and form two flat patties. Put the mozzarella on one patty and sandwich it with the other. Press around the side to seal the cheese in the burger.

Place on a baking tray and bake in oven for 15-20 mins until cooked through.

For sweet potato fries: Peel the sweet potato and cut into chip shapes. Put in a mixing bowl and mix with coconut oil, paprika, garlic powder and salt and pepper. Line a baking tray with non-stick paper and bake in the oven for 20-25 mins.

For coleslaw: Cut the cabbage and white onion as fine as possible, grate the carrot and combine with yoghurt, Dijon mustard and parsley in a bowl. Season with salt and pepper.

To serve: Serve the turkey burger hot so the cheese is still melted in the middle with the fries and coleslaw.
