What's cooking for dinner tonight? Give this fennel and king prawns spaghetti a whirl. It tastes unreal and is perfect on a training day.
What you'll need: (serves one)
6ml olive oil
60g cherry tomatoes
170g king prawns
70g whole wheat spaghetti
Small bunch of basil
Small handful of parsley
For sauce: Cut the fennel into small wedges and fry in a non-stick pan for 2-3 minutes with garlic and olive oil. Then add the raw king prawns and tomatoes and cook for 3-4 mins, or until prawns are cooked through.
For spaghetti: Cook the spaghetti in boiling water as instructed on packet and drain once cooked. Add in with fennel and prawns. Use a spiralizer to make spaghetti out of the courgette and add that to the mix.
To serve: Use a splash of the pasta water to create a small sauce and toss through the chopped parsley and basil.
