Dr Megan Rossi's Peanut Caramel Smoothie
This plant-packed smoothie is going to become a new household favourite!
Heat a saucepan over a medium to high heat. Add the sugar and half of the water and stir until the sugar has dissolved.
Remove from the heat and add the rest of the water, the lemon juice and the mint. Leave to cool completely.
Remove the mint leaves from the mixture then pour into 6 ice lolly moulds and freeze overnight or until fully set.
