Orzo with Prawns and Cherry Tomatoes

Ingredients

Serves 1

  • 50g quark
  • 1 jarred roasted red pepper
  • Pinch salt
  • 65g orzo pasta
  • 1½ tsp olive oil
  • 1 clove garlic, peeled and crushed
  • Pinch chilli flakes
  • 100g cherry tomatoes, halved
  • 100g raw king prawns, deveined
  • Small bunch basil, leaves torn

Method

Put the quark and red pepper into a small food processor with a pinch of salt, blend until smooth then set aside.

Bring a pan of water to the boil, add the orzo and cook for 8-9 minutes or according to the packet instructions.

Meanwhile heat the oil in a large frying pan, add the garlic and chilli flakes and fry for a couple of minutes. Increase the heat slightly, add the tomatoes and cook for 5 minutes until soft. Add the prawns and cook for a couple of minutes until pink and cooked through.

Drain the orzo and add to the pan with the prawns and tomatoes. Pour over the pepper sauce, add the basil leaves and stir everything together. Serve topped with a few more basil leaves.

Tip

  • You can use the same amount of yoghurt in place of the quark if preferred.
