One Pan Veggie Fajitas

Ingredients

Serves 1

  • 1 tsp olive oil
  • ½ red onion, peeled and finely sliced
  • ½ green pepper, deseeded and sliced
  • ½ yellow pepper, deseeded and sliced
  • 1 portobello mushroom, sliced
  • 2 tsp fajita seasoning
  • 40g tinned black beans, drained
  • salt and pepper
  • 2-3 mini corn tortillas
  • 40g quark
  • 50g avocado, peeled, pitted and roughly chopped
  • ½ small bunch coriander, leaves torn
  • lime wedges, to serve

Method

Heat the oil in a large, non-stick frying pan and fry the vegetables together with the fajita spices for 5 minutes until they have softened slightly. Add the black beans and cook for a few more minutes until hot. Season to taste.

Serve the veggie fajita mix on top of the tortillas and top with quark, avocado, coriander leaves and a squeeze of lime.

Tips

  • You can always add some chilli flakes when you add the fajita mix if you want a little extra heat.

  • You can use the same amount of yoghurt in place of quark if preferred.
