One Pan Scrambled Oats and Berries

Ingredients

Serves 1

  • 1 banana, peeled and mashed
  • 2 egg whites
  • 40g rolled oats
  • 1 pinch ground cinnamon
  • 1 tsp olive oil
  • 60g yoghurt, such as Greek, natural or soya
  • 40g mixed berries
  • 5g honey

Method

Mash the banana in a bowl then mix in the egg whites, oats and cinnamon. Heat the oil in the frying pan over a medium to high heat and add in the banana mix, flattening it out as if you were making a pancake.

Cook for 3-4 minutes then flip the mix over. When flipping the oats however, do it badly so it all starts to break up a bit!

Cook for 3-4 for minutes again, mixing every so often so the oats all break up and crisp up in places.

Serve with the scrambled oats with the yoghurt, berries and honey.
