Eggy Bread with Yoghurt and Berries


Serves 1

  • 2 eggs
  • 40ml whole milk
  • 10g protein powder, vanilla (optional)
  • 1 pinch ground cinnamon
  • 2 slices bread
  • 10g butter
  • 10g maple syrup
  • 65g yoghurt, such as greek, natural, soya
  • 40g mixed berries


Add the eggs, milk, protein powder and cinnamon into a large bowl and beat together with a whisk until smooth. Place the bread in the mix, turning to soak each side.

Melt the butter in a large, non-stick frying pan and fry the bread for 3-4 minutes on each side until golden brown. Serve the eggy bread topped with the maple syrup, yoghurt and berries.


You can swap the milk for semi-skimmed milk or dairy-free milk (e.g. almond or soya). You can also use frozen berries if preferred.
