Chicken and Chorizo Traybake

Ingredients

Serves 1

  • 1 tsp olive oil
  • 120g skinless and boneless chicken thigh fillet
  • 40g chorizo, sliced
  • 1/2 red onion, peeled and cut into wedges
  • 1/2 red pepper, deseeded and chopped
  • Salt and pepper
  • 30g baby spinach
  • 10g honey
  • 1 small bunch fresh thyme leaves

Method

Preheat the oven to 180ºC. Toss the oil with the chicken thighs, chorizo, onion and pepper and place in a baking dish. Season with salt and pepper and bake for 20-25 minutes until the chicken is cooked through and the vegetables are tender.

Remove the dish from the oven, mix through the spinach and drizzle over the honey. Place back in the oven for a few minutes before serving with the fresh thyme leaves.
