Try this quick and easy turkey tray bake.
240g sweet potato
400g turkey breast, diced
1 tbsp olive oil
5 cloves of garlic, unpeeled
2 red onions, peeled and cut into wedges
1 red pepper, deseeded and cut into chunks
1 yellow pepper, deseeded and cut into chunks
150g cherry tomatoes, halved
2tsp red wine vinegar
Pinch dried oregano
250g cooked lentils
Salt and pepper
Preheat the oven to 200ºC. Bring a pan of water to the boil, add the sweet potato and cook for 7-8 minutes. Drain thoroughly.
Heat the oil in a frying pan, season the turkey with salt and pepper and fry in batches until golden brown. Tip the turkey into a large bowl, add the sweet potatoes then add the remaining ingredients., except the lentils. Toss everything together then tip into a large baking tray. Transfer to the oven and roast for 15 minutes, shaking the tray occasionally. Stir in the lentils and return to the oven for 5 minutes.
