Chicken Burger with Pepper Relish

Ingredients

Serves 1

  • 100g boneless chicken thigh fillet
  • 1/4 tsp garlic granules
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 1/2 jarred roasted red peppers, in brine
  • 1 pinch salt
  • 1 tsp cider vinegar
  • 130g sweet potato, cut into wedges
  • 1 tsp olive oil
  • 1 tsp dried sage
  • 20g peri peri sauce
  • 1 burger cheese slice (or grated cheese)
  • 1 burger bun

Total time: 30 minutes

Method

Place the chicken in a large bowl. Rub in the garlic granules, paprika and cayenne pepper. Leave to marinate for 15 minutes.

Finely dice the red peppers and mix with the salt and vinegar. Set to one side.

Preheat the grill to high. Place the sweet potato wedges in a covered bowl with a splash of water and microwave for 4 minutes until just tender. Gently toss with half the oil and the dried sage and place under the grill turning every few minutes until crispy.

Heat the oil in a non-stick frying pan over a medium to high heat. Fry the marinated chicken thighs for 4-5 minutes on each side, until cooked through and starting to crisp up.

Toast the bun and spread a little of the peri peri on the bottom bun before topping with the chicken then the cheese, followed by the roasted pepper relish.

Drizzle over the remaining peri peri sauce and add the burger lid and serve with the sweet potato wedges before tucking in.
