Chicken Meatball and Pepper Pasta
Cor, these meatballs are unreal! A tasty dinner that's great for batch cooking too.

Preheat the oven to 220ºC. Wrap the potato in a couple of sheets of damp kitchen paper and microwave on high for 15 minutes, or until soft. Transfer to a baking tray and sprinkle with the salt. Place in the oven for 10 minutes to crisp the skin up.
Meanwhile heat the oil in a saucepan over a medium to high heat. Cook the garlic and mince for a few minutes until the mince has browned. Stir in the tomato purée, chopped tomatoes, mixed herbs and marmite. Simmer for 5 minutes until cooked through and thickened slightly, and season to taste.
Split the baked potato open, top with the bolognese and sprinkle with parmesan to serve.
This is very easy to scale up if you wanted to cook for a group or make some extra to pop in the freezer to get ahead on meal prep.
