This sweet potato and smoked haddock tortilla tastes incredible. Healthy fish and eggs cooked together with tasty tomatoes, what's not to like? A good idea is to double up the quantities in this recipe, so you can prep like a boss and stock up the fridge up for the week ahead.



220g sweet potato, peeled and cut into small cubes

2 egg whites

2 eggs

60g cherry tomatoes, sliced into quarters 

handful of baby spinach, finely chopped

260g smoked haddock, cut into small chunks 

small handful of fresh parsley, chopped

lemon zest

10g butter

60g red onion, thinly sliced

40g sour cream

130g green vegetables (spinach, kale, broccoli, mange tout or green beans)  



Heat the grill to maximum.

Put the sweet potato in the microwave and blast on full power for 4-5 minutes, let it sit for 2 minutes and blast it again until it’s soft.

In a large bowl, whisk together the egg whites and eggs, then add to this the tomatoes, spinach, haddock, sweet potato, parsley and lemon zest.   

In a non-stick pan, heat the butter over a medium heat and fry the onions for 2-3 minutes until soft, then tip in the egg mixture.

Cook this for 2-3 minutes until the eggs start to firm up around the side of the pan. Now slide the pan under the grill for 2-3 minutes until the tortilla is completely cooked and firm to touch. 

Finally plate the tortilla up with a batch of cooked green veggies and the sour cream.
