This vegetarian Mexican bean burger tastes absolutely amazing and it's perfect after you've smashed a workout. Give it a go and let me know what you think.
100g sweet potato, cut into wedges
5g coconut oil
55g white onion, diced
1 garlic clove, grated
70g tinned kidney beans, drained
70g tinned chickpeas, drained
1 tsp ground cumin
1 tsp ground coriander
pinch of cinnamon
small handful of fresh coriander
70g 0% fat Greek yoghurt
1 tsp chipotle paste
2 small handfuls of salad greens
50g tomato, sliced
1 medium wholemeal bap
Preheat oven to 180°C (fan 160°C, gas mark 4).
Stick the sweet potato wedges in the microwave for 6-8 minutes on full power or until just turning soft, then leave to rest for 30 seconds.
While the sweet potato is spinning in the microwave, melt half the coconut oil in a non-stick frying pan over a medium heat. Gently fry the onion and garlic for 2-3 minutes. Add your beans and chickpeas into a mixing bowl and give a good mash with a fork. Now throw in the cumin, coriander, cinnamon, egg, fresh coriander, breadcrumbs and onion mix. Combine with your hands and shape into two patties.
Heat a non-stick pan to a medium heat and add the remaining oil. Carefully lay the sweet potato wedges and patties in the pan, turning after 3-4 minutes or until they are nicely coloured, then transfer to the oven for 4-5 minutes or until hot through.
When the wedges and burger are ready to serve, mix together the yoghurt and chipotle paste, then build your burger. Fill each bap with a burger, salad, tomato and chipotle yoghurt, serve with the remaining salad greens.
