Chilli cauliflower tacos

This is a real street food classic, simple fresh ingredients that taste amazing. These little tacos can be thrown together super quick.


INGREDIENTS 

150g cauliflower, cut into florets

5g coconut oil

70g red pepper, cut into strips

160g tempeh, cut into small cubes

1 tsp piri piri spice

pinch of chilli powder

40g red onion, cut into small dice

Small handful of fresh coriander

3 small tortilla wraps

70g 0% fat Greek yoghurt

½ lemon, juice

squirt of hot sauce – optional 


METHOD

Bring a pan of water to the boil and carefully drop your cauliflower into the boiling water for 1-2 minutes, drain and allow to cool slightly.

Melt the oil in a non-stick pan over a medium to high heat and fry the cauliflower, pepper and tempeh for 3-4 minutes, just until the cauliflower is crisping up, the peppers are starting to soften and the tempeh is nice and crispy.

Now throw in your spices, turn off the heat and give a good mix.

To build your tacos, zap your tortilla in the microwave for 10-15 seconds, pile on the cauliflower filling, scatter over the onions and coriander, and mix the yoghurt with the lemon juice and drizzle over. Finish with a squirt of hot sauce if you want to spice it up.
