Butternut Squash and Coconut Soup

This butternut squash and coconut soup is straight out of my Veggie 90 Day Plan and it's so good. It's really quick and easy to make too.

Ingredients

1 tsp coconut oil

160g butternut squash, diced

1/2 red onion, sliced

1/2 red chilli, sliced

1/2 tsp ground cumin

1/2 tsp turmeric

100ml coconut milk

200ml water

10g soya protein powder

Juice of ½ a lime

20g unsalted roast peanuts, roughly crushed

Small bunch of coriander, chopped


Method:

Heat the oil in a saucepan, add the squash and fry for 3-4 minutes until slightly coloured and starting to soften. Add the onion and chilli and fry for a couple of minutes until softened. Add the spices, fry for a minute then pour in the coconut milk, water and protein powder.

Bring to the boil then reduce the heat and simmer gently for 7-8 minutes until the squash is cooked through. Remove from the heat, stir in the lime juice then ladle into a warm serving bowl. Top with the crush peanuts and the coriander.
